In a large mixing bowl, combine the beaten egg, milk and melted margarine. Add the orange juice, rind, apples and vanilla. Sift together the flour, baking powder and salt and stir into the milk mixture with a spoon until blended, taking care to not overmix. Preheat oil in a skillet to 350°. Spoon drop into the hot oil and fry to a golden brown, being sure to turn so that it browns evenly. Allow fritters to cool and then roll in powdered sugar. Yields approx. 40 fritters.
