Dissolve the lemon jello in the boiling water, once dissolved add the cold water and vinegar to the mix. Add the mayonnaise, salt and pepper, then chill until partially set. Put the spinach in a colander overnight and squeeze out all the moisture until the spinach is completely dry.
Once the jello mixture is partially set, beat and then add the spinach, cottage cheese, celery and onion. Mix together and let set.
Optional: You can add a grated hard boiled egg and/or grated cheese to the top.
