Raisin-Rice Pudding

Raisin-rice pudding makes a delicious dessert, 6 servings.

Combine eggs, sugar, and milk; beat at medium speed of an electric mixer 1 to 2 minutes or until sugar dissolves. Add remaining ingredients; stir well. Pour into a greased 1 1/2 quart casserole; place casserole in a baking pan. Pour boiling water into baking pan 1 inch deep.

Bake, uncovered, at 350° for 40 to 45 minutes or until mixture is slightly thickened. Stir and bake an additional 10 to 15 minutes or until set. Serve warm or at room temperature.
