Line the pans with waxed paper. Cream the shortening until soft. Add the sugar gradually, continuing to cream until light and fluffy. Add eggs, vanilla and beat thoroughly. Combine the cocoa, water and coloring. Sift flour, baking powder, soda and salt together. Alternately add in thirds, flour and cocoa mixtures and beat well after each addition. Pour into the pans, spread evenly. Bake in moderate oven for 350° for 35-45 minutes. When done, remove from the oven and let stand for 5 minutes. Turn out onto a cooling rack, then peel off the paper and turn, top side up and cool. Finish with the desired filling and frosting.
