After frying the bacon, pour off all but 2 tablespoons of drippings. Add the celery and mushrooms and saute just until tender. Pour into a 1 1/2-quart baking dish. Stir in the water, tomatoes, soup, rice and 1/2-cup cheese. Sprinkle with the rest of the cheese. Cover and bake at 375° for 20 minutes or until the rice is tender.
