Who doesn't love rice pudding?

Combine rice and water in a saucepan. Heat to boiling, stiring occasionally. Reduce heat, cover and simmer for 14 minutes. Blend the sugar[1], cornstarch and salt. Beat egg yolks slightly, then add with milk to sugar/cornstarch mixture. Beat well. Stir in rice, vanilla and raisins. Pour into ungreased 1 1/2 qt casserole pan, then place in a pan of hot water. Bake at 350° for 30 minutes. Stir occasionally until the pudding is creamy and most of the liquid is absorbed. Beat egg whites with sugar[2] and spread on top of the pudding. Enjoy!
