Roquefort Dressing

Ingredients:

• 1 egg yolk
• 1/2 cup salad oil
• 1 teaspoon dry mustard
• 1/2 teaspoon paprika
• 1 tablespoon red wine garlic vinegar
• 1 container sour cream
• 4 to 6 oz wedge roquefort cheese

Instructions:

Put the egg yolk in a small bowl and beat at high speed with an electric mixer. Decrease the speed and add the oil in a very small stream. Add the mustard, paprika and vinegar and beat at high speed. Fold in the sour cream and crumbled cheese.
