Rum Rice

Several hours ahead, soak the raisins in the rum.

Cook the rice, salt, sugar and milk in the top part of a double boiler or in a heavy saucepan for 30 minutes until the rice is tender and the liquid absorbed. Add the raisins, nuts, lemon juice and egg. Melt the butter in a medium sized skillet, but do not let brown. Add the rice mixture and cook until the edges are crusty. Turn the rice and brown the other side. When ready to serve, sprinkle with cinnamon and sugar.
