Sausage Cornmeal Scrapple

NOTE: You can remove the sausage to make a vegatarian scrapple.

Instructions:

Combine cornmeal, milk, sugar and salt. Gradually stir into boiling water, continue cooking and stiring until thick and bubbly. Cook covered over low heat about 10 minutes.

Crumble sausage firmly and add cornmeal mixture. Pour into loaf pan, cover and chill.

To serve, cut the scrapple into 1/3 inch slices, dip into flour and fry slowly in margarine for 15 to 20 minutes or until lightly browned, turning only once. Serve with butter or margarine and maply syrup if desired. Makes 6 servings.
