Preheat the oven to 350°. Combine the sugar and butter in a bowl, then beat with a mixer at medium speed until well blended. Add the banana, milk, sour cream and egg whites and beat well. Lightly spoon the flour into dry measuring cups, and level with a knife. Combine the flour, baking soda and salt then stir well. Add the flour mixture to the banana mixture, beating until blended. Spoon the batter into 4 mini-loaf pans coated with cooking spray. Bake at 350° for 45 minutes or until they test clean with a toothpick. Cool in the pans for 10 minutes on a wire rack, then remove and completely on the wire racks.
