Schum's Stuffing

In a medium skillet, melt the butter or margarine. Add the celery, onion and garlic. Cook for about 5 minutes or till the vegetables are tender, stirring occasionally. Transfer the mixture to a large bowl. In the same skillet, cook the sausage till done. Drain on paper towels and set aside to cool.

In a medium bowl, whisk together eggs, milk, poultry seasoning, thyme, sage and pepper till blended. Add bread cubes, cooled sausage and egg mixture to vegetables in large bowl. Add enough chicken stock (or substitute) to moisten. Toss gently to combine.

Stuff poultry or pockets in chops with mixture, or turn stuffing into a casserole. Cover and bake in a 350°F oven for 35 to 45 minutes. Yields 8 to 10 servings or enough stuffing for one 8-10 pound turkey.
