Bring the water to a boil, then add the shrimp and cook for 3 to 5 minutes or just until the shrimp turn pink. Drain and rinse with cold water. Peel the shrump and devein, then finely chop. Stir together 1/4 cup of parmesan cheese, cream cheese, sour cream, green onion, cajun seasoning, then stir in the shrimp. Chill for 8 hours. Bake the pastry shells according to package directions and cool completely. Fill the pastry shells with the shrimp mixture. Place on baking sheets and sprinkle evenly with the remaining 1/4 cup of parmesan cheese. Bake at 325° for 10 to 15 minutes or until thoroughly heated. Serve immediately.
You can also serve these cold - cover and chill for 1 hour instead of baking. Sprinkle with parmesan right before serving.
