Snow Pudding

Ingredients:

• 1 tablespoon gelatin
• 1 cup sugar
• 1/4 teaspoon salt
• 1 1/2 cups boiling water
• 1/4 cup lemon juice
• 3 egg whites
• crushed fruit

Instructions:

Mix the gelatin, sugar and salt together. Add to the boiling water and stir until the gelatin dissolves. Add the lemon juice and chill until it turns thick. Add the egg whites and beat until thick enough to hold its shape. Mold and chill until firm. Serve with crushed fruit.
