Melt the butter over low heat, then stir in the flour, salt, and pepper until smooth and bubbly. Remove from heat, then add the milk and return to low heat, stirring until thick. Spread sauce over the top of the baked spinach, then sprinkle entire dish with finely chopped egg and serve immediately.
