Sugar Snap Peas w/ Goat Cheese

Cook peas in boiling water and cover for 2 minutes, then drain. Plunge into ice water to halt the cooking process, then drain. Saute the shallots in hot oil in a large skillet until tender, then add the peas and cook until thoroughly heated. Place the mixture in a bowl, then add the tomatoes and remaining ingredients, tossing gently. Serve immediately.
