Brown the pork chops on both sides in a nonstick skillet, then set aside. Place 3/4 cup of apple cider, sweet potatoes, green onions, sage, salt and pepper in a saucepan and bring to a boil, cover and reduce the heat, simmering for 10 minutes. Add the apple and pork chops, cover and simmer for 10 to 15 minutes or until the sweet potato is tender and the pork chops are done. Remove the apple, sweet potato and pork chops to the serving plate, reserving the drippings in the skillet. Combine the remaining 1/4 cup of cider with cornstarch, stirring until smooth. Cook over medium heat, stirring constantly until the mixture thickens and boils. Boil, stirring constantly for 1 minute, then pour over the pork chops.
