Sweet Potato Pudding

Ingredients:

• 1 cup sugar
• 1/2 cup milk
• 1 1/2 cups raw sweet potatoes, peeled and grated
• 2 eggs
• 1 teaspoon cinnamon
• 1/2 teaspoon ground cloves
• 1/2 cup chopped pecans
• 1/4 cup sherry
• 1 tablespoon butter, cut into small pieces

Instructions:

Preheat the oven to 350° and spray a baking dish with cooking spray and set aside. Mix the sweet potato, milk, sugar, spices, eggs, pecans and sherry in a large bowl an dpour into the prepared baking dish. Dot the surface with the butter pieces and bake for 30 minutes or until the center is firm.
