Bring the potatoes and water to a boil in a large Dutch oven and cover. Reduce heat and cook for 20 minutes or until tender, then drain. Repeat the procedure with the sweet potato. Beat the regular potatoes at medium speed with an electric mixer until mashed. Add half of the milk, half the cheese and 1 tablespoon of butter, beating until smooth. Stir in the onions, 1 teaspoon of salt an dpepper. Spoon into a lightly greased 3-quart oval baking dish. Beat the sweet potato until mashed, then add the remaining milk, cheese and butter, beating until smooth. Stir in the remaining salt and thyme. Spread over the regular potato mixture and swirl gently with a knife. Cover and chill up to 8 hours, if desired. Bake at 350° for 25 to 30 minutes or until thoroughly heated. Garnish with chopped green onions if desired.
