The Drake's Rice Pudding

In top of double boiler over simmering water, combine rice and 1 cup milk. Cover; cook till rice is tender and milk absorbed, 30 to 40 minutes.

Meanwhile, in a bowl, lightly beat eggs. Stir in the 2/3 cup milk, light cream, sugar, yellow food coloring, vanilla, and dash of salt. Strain, if desired.

Pour raisins into a 1 1/2 quart casserole. Fluff rice and add to casserole in a 13x9x2-inch baking pan on over rack. Pour boiling water into the pan around casserole 1 inch deep.

Bake, uncovered at 375° for 40 to 45 minutes or until knife inserted halfway between center and edge comes out clean. Serve warm or chilled. Serves 4 to 5.
