Tiramisu

Stir together the sugar, 2 cups whipping cream, 2 large eggs, 2 egg yolks, flour and vanilla bean in a heavy saucepan. Cook over medium heat, stirring constantly for 20 minutes or until thickened. Cool completely. Discard the vanilla bean, then cool. Whisk in the mascarpone. Stir together the espresso and marsala. Dip each ladyfinger in the coffee mixture and place in a 13x9-inch baking dish. Pour the mascarpone mixture over the ladyfingers. Beat the remaining 1 cup of whipping cream at high speed with an electric mixer until foamy, then gradually add the powdered sugar, beating until soft peaks form. Spoon over mascarpone mixture and sprinkle with cocoa. Cover and chill for 2 hours.

Prepare the espresso by stirring together 1 cup of hot water and 1/2 a cup of ground espresso coffee. Let stand for 5 minutes, then pour through a wire-mesh strainer lined with a coffee filter into a measuring cup, discarding the grounds.
