Vanilla Mini-Muffins

Preheat the oven to 400°. Grease 36 1-inch muffin pan cups. Sift together the flour, sugar, baking powder and salt into a large bowl. Using a wooden spoon or electric mixer, beat the egg, milk, melted butter and vanilla to blend well. Stir the milk mixture into the flour mixture only until just blended. Spoon the batter into prepared muffin-cups, filling 2/3rds full. Bake for 15 minutes until lightly browned and the muffins test done.
