Vanilla Pudding

In a saucepan, combine the sugar and cornstarch, then whisk in the milk. Cook over medium heat just until bubbling, then reduce the heat to low and simmer for 1 minute. Whisk 1/2 a cup of the milk mixture into the lightly beaten eggs, then gradually whisk the eggs back into the milk mixture and cook over low heat, whisking constantly, until it is thick enough to coat the back of a spoon. Remove from the heat and add the vanilla extract. Cover the surface with plastic and chill until set, for about half an hour.
