Ingredients:
- 4 leeks or 1/2 cup onion, chopped
- 3 cups potatoes, sliced and pared
- 3 cups boiling water
- 4 chicken bouillion cubes
- 3 tablespoons butter or margarine
- 2 cups half and half
- 1 teaspoon salt
- dash of pepper
- 1/2 teaspoon paprika
- 2 tablespoons snipped chives
- 1/4 teaspoon curry powder (optional)
Instructions:
Put the potatoes, onions and bouillion cubes in the boiling water. Cook covered until very tender. Add the rest of the ingredients and place in a blender. Serve either hot or cold.
