Ingredients:
- 1 onion, thinly sliced
- 1 large garlic clove, minced
- 1 tablespoon olive oil
- 2 cups chicken or vegetable broth
- 1 (19oz) can white kidney beans, drained and rinsed
- spinach, torn and equal to at least half of a 10oz bag
- pinch of pepper
- parmesan cheese
Instructions:
Saute the onion and garlic in olive oil until fragrant, then add the broth. Stir in the kidney beans and a generous pinch of pepper. When the broth gets hot, add the spinach, then stir in the cheese. Serve hot.
