In a bowl, at low speed use a mixer to beat eggs until frothy. Beat in the milk, and then the flour and salt. Mixture can be chilled until needed at this point.
Preheat over to 500°. Pour drippings into a 13x9-inch baking or roasting pan (do not use a glass dish). Heat in the oven for 5 minutes. Pour the batter into the pan on top of the drippings. Bake for 15 minutes. Reduce heat to 350° and bake for 15 more minutes or until crisp. Cut into squares and serve immediately.
